What's the difference between Open Source and Enterprise?

Open Source is self-hosted on your infrastructure. Enterprise (coming soon) will be a fully-managed cloud service with SLAs, dedicated support, and enterprise compliance certifications.

Can I use AIM for commercial projects?

Absolutely. The AGPL-3.0 license allows commercial use. If you modify AIM and distribute it, you must share your modifications. Using AIM as a service for your own applications is fine.
